VRAT KI BURFI

Ingredients

1½ cups water chestnut flour (singhade ka atta)

¾ cup ghee

¼ cup almond flour

1 cup desiccated coconut

1 cup milk

4 tbsps Sugar Free Green Powder

½ tsp green cardamom powder

Slivered almonds to sprinkle

Method

  1. Heat ghee in a nonstick pan. Add water chestnut flour and sauté on medium heat for 10-15 minutes or till it turns golden brown in colour.
  2. Add almond flour, desiccated coconut and mix well. Cook for 2-3 minutes
  3. Add milk and mix well. Add Sugar Free Green Powder and cook till it dissolves and the mixture becomes thick.
  4. Add green cardamom powder and mix well.
  5. Transfer the mixture in a greased burfi tray and spread evenly. Sprinkle almonds on top and set aside for 3-4 hours.
  6. Cut into squares and serve.

Preparation Time: 3-4 hours

Cooking Time:  20-25 minutes

Serves: 4

Amount of the Sugar: 156 grams

Amount of Sugar Free Green Powder:  37.6 grams

Tip:  If desiccated coconut is not available, scraped fresh coconut can be used.

 

LAUKI KE LADDOO

Ingredients

2 cups coarsely grated bottle gourd (lauki)

5 tbsps ghee + for greasing

2 tbsps edible gum resin (gond)

¼ cup grated mawa

4 tbsps Sugar Free Green Powder

¼ cup coarsely crushed mixed nuts (almonds, cashew nuts and pistachios)

3 tbsps melon seeds (magaz)

¼ cup desiccated coconut

¾ tsp green cardamom powder

¼ tsp nutmeg powder

Gold varq for garnish

Pistachios powder for garnish

Method:

  1. Heat 2 tbsps ghee in a nonstick pan, add edible gum resin and sauté till they puff up. Transfer on a plate.
  2. Heat the remaining ghee in the same pan, add bottle gourd and sauté for 6-8 minutes or till the mixture become dry.
  3. Add mawa, continuously mix and cook for 2-3 minutes. Add Sugar Free Green Powder and continue to cook till it melts completely and mixture thickens. Take the pan off the heat and allow to cool slightly.
  4. Coarsely crush the puffed edible gum resin, add the bottle gourd mixture, mixed nuts, melon seeds, desiccated coconut, green cardamom powder, and nutmeg powder and mix till well combined.
  5. Grease your palm with ghee, take small portions of the mixture and shape each portion into a ball.
  6. Arrange on a serving plate, garnish with gold varq and pistachios powder. Serve.

Preparation time: 30-35 minutes

Cooking time: 15-20 minutes

Serves: 4

Amount of the Sugar: 156 grams

Amount of Sugar Free Green Powder:  37.6 grams

Tip:  Make sure the heat is medium while cooking gum resin. Otherwise it will remain chewy from inside.

RAGI KHEER

Ingredients

2 tbsps finger millet (ragi)

4 cups milk

3 tbsps Sugar Free Green Powder

¼ tsp green cardamom powder

2 tbsps chopped mixed nuts + for garnish

Dried rose petals for garnish

Method

  1. Take ragi in a bowl, add water and wash it once, add ½ cup water and let it soak for 6-8 hours.
  2. Drain the ragi and put into a blender jar and blend to a coarse paste.
  3. Bring milk to a boil in a deep pan.
  4. Add the blended paste, mix and cook for 16-20 minutes or till the ragi is cooked completely. Stirring the mixture occasionally.
  5. Add Sugar Free Green Powder, mix and cook till it melts. Add green cardamom powder and mixed nuts and mix well. Cook for 1-2 minutes.
  6. Serve hot garnished with mixed nuts and dried rose petals.

Preparation time: 7-8 hours

Cooking time: 31-40 minutes

Serves: 4

Amount of the Sugar: 104 grams

Amount of Sugar Free Green Powder:  28.2 grams

Tip:  You can use any other millet in this recipe.
