The unprocessed kernel of wheat is what is known as a wheat berry. The entire package includes the endosperm, germ, and bran. Wheat berries are packed with vitamins, fibre and protein. They're ideal as a breakfast cereal, a lunch salad, or a dinner side dish. Here is how to cook them.
Stovetop
Place the wheat berries in a bowl. Cover with water. Leave to soak overnight.
Drain. Rinse well using cold water.
Fill a pan with water. Add the rinsed wheat berries.
Bring the pan to a boil, then reduce the heat to simmer.
Simmer for 1 to 1 1/2 hours. The wheat berries should be tender and chewy.
Microwave
Soak overnight and drain as above.
Use two cups of water for each cup of wheat berries.
Microwave for 25 minutes. Keep an eye on it and add more water if needed.
Check the consistency. They should be soft and chewy; use more time if needed.
