Have you tried Courteney Cox’s lunch special, even though you must have all enjoyed Jennifer Aniston’s salad recipe? It is packed with beneficial vegetables and a protein source that is common in many homes. The former Friends star recently shared a photo of herself making the three vegetables, one protein meal on Instagram.
Courtney claims that she first tried this sautéed veggie dish at a restaurant in Los Angeles and then decided to make her own version of it.
“There’s a restaurant in this store called Fred Segal," she says in the Instagram video. “I ordered this thing for lunch…I have no idea how to make it, but I’m going to wing it," she continued.
What, though, makes this lunch dish so unique? First of all, it is basic and really simple to prepare. Second, it has nutritional greens that are wonderful for your general health. Finally, the dish’s protein source will ensure that you get your fill of protein.
Courtney Cox utilises three veggies, including zucchini, broccoli, and mushrooms for vegetables, as well as ground chicken for protein, in the Instagram video. You may, however, pick any other nutritious vegetables, such as kale, spinach, Brussels sprouts, peas, and carrots. You can eat lean meat or shellfish for protein.

Note the ingredients:
- Three vegetables: Sliced zucchini, parboiled broccoli, sliced mushrooms
- Extra-virgin olive oil
- 4 crushed garlic cloves
- 1 pound ground chicken
- Seasoning: Salt, black pepper, soy sauce, red pepper flakes (optional)
Let’s get started now…
- In a pan, heat the olive oil. Add the minced garlic and sauté.
- Add the parboiled broccoli and cook until tender.
- Next add the zucchini and cook until tender.
- Lastly, add the mushrooms, soy sauce, salt and crushed red pepper flakes.
- Take another pan and heat olive oil.
- Add the ground chicken and sauté with salt and pepper. Cook it through.
- When the vegetables and chicken are cooked and tender, drain the excess liquid, mix and stir to combine.
- Serve it warm.
