Relishing the Russian delights...
CNN-IBN correspondent Bikramjeet Ray found a side of Russian food that was far from peasant.

New Delhi: Russia is known for a long-lasting and unforgiving winters. Hence the food should give enough energy and warmth to survive during the winter time and hence the essential components of Russian cuisine are carbohydrates and fat rather than proteins.

Fresh fruits and vegetables are rarely used in food. CNN-IBN correspondent Bikramjeet Ray found a side of Russian food that was far from peasant.

Pork Pobarski

You will need:

250 gms Pork fillet

2 Egg

1 onion

2 Tomatoes

1 egg plant

100 gms Mushroom

50 gms Cream

25 gms Mayonnaise

100 gms Cheese gauda

1/2 Capsicum

1 sprig Dill

200 ml Sunflower oil

Salt, Black pepper (for seasoning)

Flour to coat

METHOD

For the sauce:

Fry the onion with mushrooms. Add cream, mayonnaise capsicum and dill, salt to taste and bring to a boil before putting aside.

For Pork Po barski

Flatten the pork fillet, sprinkle with salt and pepper. Coat with flour and fry in sunflower oil.

Cut egg-plant and tomato into rings, fry.

Put egg plant and tomato on top of the fillet, scoop the sauce in the centre of the fillet and then cover with grated cheese. Bake in the oven till brown, around 10 minutes.
